Instructions

  • Tapioca pearls should be rinsed and soaked in water for 30 minutes.
  • Combine soaked tapioca pearls, 4 cups water, and 1/2 cup sugar in a pot.
  • Bring to a boil, then reduce to a low heat.
  • Cook for 15 minutes, or until the pearls have become translucent.
  • Remove from the heat and set aside to cool.
  • Puree raspberries, 1/4 cup sugar, and 1/4 cup water in a blender.
  • Layer tapioca pearls, raspberry puree, and whipped cream in a parfait glass.
  • Layers should be repeated until the glass is full.
  • Refrigerate for at least one hour before serving.
